There’s only one person who knows the century-old secret cannoli recipe at Gargiulo’s Restaurant in Coney Island, Brooklyn and that’s Chef Matthew Cutolo. Since before he could tie his shoes, Chef Cutolo has been learning trade secrets of the family business from grandparents, parents, aunts, uncles and cousins. Over the years, these lessons took place in the kitchen, the restaurant’s dining room and catering hall – and even the backyard. Chef Cutolo is a third generation Italian-American chef and helps his family run front- and back-of-house operations at Gargiulo’s, one of the oldest Italian restaurants in NYC. Cutolo is a champion of the “old-school” Brooklyn way,” guided by the traditions of Neapolitan cooking and his family roots in Sorrento, Italy.
